Malay Beef Curry
Ingredients:
1 large stem lemongrass, white part only, chopped
1 small onion
2 tbsp sweet chilli sauce
1 tsp McCORMICK Chilli flakes
2 tsp McCormick Ground Turmeric
1 tsp lime juice
500g beef, thinly sliced
1 x 200g can light coconut milk
1 cup green beans, sliced
50g baby spinach
Method:
Blend the first five ingredients in a food processor until it turns into a smooth paste.
Marinate beef in the spice paste for at least 30 minutes. Stir fry beef and curry paste for 5 minutes. Add in coconut milk and sliced beans and simmer for a further 10 minutes.
Mix through spinach leaves and serve on a bed of jasmine rice.
